If you asked most people whether they would like to eat dough which has been dipped in caustic soda—the stuff you use to unblock drains—I don’t imagine they would be too keen. The lye doesn’t seem to put consumers off, judging from the fact that the U.S. market for hard and soft pretzels combined was worth $1.6 billion in 2022, up 16% from the year before. We will probably never find out who was the first ingenious baker to take dough and twist it into a knot, but that person engineered a winner. The pretzel’s shape made it easy to store on racks and easy to eat; there is something about the loops that makes you want to pick it up and tear it apart. The pretzels in the painting would not look out of place at a baseball game today, except that the holes inside the knot are slightly bigger.

If you want to know what disappointment feels like, simply open your kitchen cupboard and search for a nonstick pan that is more than a year old. In my experience, no matter how promisingly they start off, every nonstick pan loses its slickness until you find yourself scrubbing off encrusted pieces of food. The global nonstick cookware market is worth $20 billion, according to a market report last year by Dublin-based Grand View Research, and it is expected to grow to $25 billion by the end of the decade. The magazine Cook’s Illustrated says that 70% of all skillets sold in the U.S. are now coated with some kind of nonstick surface. Even if you are not worried about the safety of the various chemicals used for nonstick cookware, it seems odd to buy a pan knowing it will soon let you down.

Does anyone actually learn to cook from TikTok? Maybe I am just too old for it, but the “food hacks” that go viral on the video app seem designed more to make you gasp than to cook better. TikTok food videos can seem pointless at best (Oreo sushi, anyone?) But boiling wooden spoons is a terrible idea because wood can split and bleach at such high temperatures. To keep wooden spoons hygienic, you just need to give them a gentle wash in soapy water.

The best thing I’ve eaten so far in 2023 was a deep-fried globe artichoke. If you’ve never had one, a deep-fried artichoke is a glorious thing. If all vegetables tasted like this, few children would need to be coaxed to eat their greens. This artichoke made me think—and not for the first time—that our whole idea of healthy eating needs redefining. By February most people who started a New Year’s diet will have already abandoned it, and no wonder.
